酵素是什么?What is Enzyme?

 

Enzyme一字源自希腊文原意为 「in yeast」 ,描述在酵母菌中,含有某种神奇的催化活力,可以把糖转变为酒精,故名为酵素。

巿面上出现许多酵素,主要可分为两类:

1. 以食品原料,如蔬果、榖类或草本中药为材料,植入菌种发酵而成的综合「酵素」,又称「酵素水解精华液」。

2. 从食品原料直接萃取其分解酵素者。(例如: 菠萝酵素、木瓜酵素等.... )


 


酵素的三大好处

Enzyme word derived from the Greek original meaning "in yeast", described in the yeast, contains a magical catalytic activity, can be converted to alcohol, sugar, hence the name enzyme.
